Mornings are the busiest time of the day. We all hustle to get up on time and get ready for work. Amidst all the chaos comes the struggle of ‘What’s for breakfast?” After all, food is the fuel of our body that allows us to stay alert and active throughout the day.

Due to lack of time, breakfast escapes our attention completely and we end up making unhealthy choices that lead to lack of energy and hunger all day long.  It is important to start your day with protein-packed food that is high in carbs. Something that makes you feel full and helps get throughout the day. Here are some healthy, easy, and yummy breakfast recipes that won’t take much of your time and are easy to make on the go.

Sooji Upma- Sooji upma is a delicious South Indian breakfast dish prepared with the help of roasted semolina and green veggies. It is easy to make and full of nutrition.

Servings- 2

  • ½ cup sooji
  • 1 ½ cups water
  • 1 small finely chopped onion
  • ½ tsp urad dal
  • ½ tsp chana dal
  • 2-3 tsp peanuts
  • ½ tsp mustard seeds
  • 8-10 cashews
  • 1-2 finely chopped chilies
  • ½ tsp finely chopped ginger
  • Curry leaves
  • 2-3 tsp cooking oil
  • 1 tsp ghee
  • Salt as required
Preparation Steps:
  • Fry sooji on a low flame for at least 5 minutes.
  • Heat oil in a pan. Add mustard seeds, chana dal, urad dal, and peanuts and sauté until they turn light brown in color.
  • Next, add cashew nuts, green chilies, and chopped ginger and fry until they turn brown.
  • Add curry leaves and fry it for a few seconds.
  • Now add chopped onions and sauté until they are translucent.
  • Add water and soil and let it boil.
  • Now slowly start adding sooji and stir continuously to avoid the formation of lumps.
  • Mix it well, cover the pan, and let it cook over a medium flame for about 3-5 minutes or until sooji gets cooked.
  • In the last step, add ghee to it, mix until well combined and your sooji upma is ready to serve with hot ginger tea.
Poha- Poha is a quick and easy breakfast meal made of flattened rice, onions, and Indian spices.

  • 1 ½ cups poha (flattened rice)
  • 1 large finely chopped onion
  • ¼ tsp turmeric powder
  • 1 tsp mustard seeds
  • 2-3 tsp peanuts
  • 1 chopped green chili
  • 1 tsp sugar
  • 10-12 curry leaves
  • 10-12 coriander leaves
  • 1-2 tsp cooking oil
  • Salt as required
Preparation Steps:
  • Rinse poha in water till they lose their crunchiness and become soft.
  • Now add sugar, salt, and turmeric powder to poha and mix it well
  • Heat oil in a pan. Add mustard seeds and wait for them to crackle.
  • Now, add onions to the oil and sauté them till they become translucent.
  • Add green chilies and curry leaves and sauté for half a minute. Then add peanuts and stir well.
  • Next, add rinsed poha and stir. Cover the pan and steam the poha for 2-3 minutes on a low flame.
  • Switch off the gas and let the poha remain covered for 1-2 minutes.
  • Now, remove the cover and sprinkle some lemon juice and coriander leaves on poha. The light and tasty poha is ready to serve with hot tea/coffee.
Vegetable Egg Omelette- A vegetable omelette is a dish made from beaten eggs friend with green veggies in butter or oil.

Serving- 1

  • 2 eggs
  • 1 tsp finely chopped onions
  • Chopped green chilies
  • 1 tsp finely chopped tomato
  • 1 tsp finely chopped capsicum
  • A pinch of turmeric
  • Salt as required
  • 1 tsp oil or butter
  • Finely chopped coriander leaves
Preparation Steps:
  • Firstly, chop onions, tomatoes, capsicum, chilies, and coriander leaves finely. Mix them together in a bowl with salt and turmeric.
  • Break the eggs in that bowl and beat them well until they are foamy.
  • Add oil to a pan and heat on a medium flame.
  • Pour the egg mixture in the pan and allow to cook on a medium flame.
  • Once it is cooked well on one side, flip it to the other side and cook till done. You can sprinkle pepper or chili powder as per your taste.
  • The omelette is ready to serve with bread and tea.
Oats Porridge- A quick porridge made of oats, water, milk, and sugar.

  • 1/2 cooking oats
  • 2 cups of water
  • 1 cup of milk
  • 2 tsp sugar
Preparation Steps:
  • Put oats in a pan, pour in milk and water. Do check the consistency as per your requirement.
  • Add sugar to the mixture. You can also skip adding sugar if you are thinking to add fruits in the later stage.
  • Stir it well and heat the porridge mixture on a low to medium flame.
  • Stir the mixture often and allow the oats porridge to boil.
  • The consistency of the porridge will thicken as it cooks. Cook the mixture for at least 5 to 6 minutes.
  • Your oats porridge is ready to serve hot.
Besan Cheela- It is a salty and tasty pancake made up of besan, spices, veggies, and herbs, which is full of nutrition.

Servings- 4

  • 1 cup besan
  • ½ tsp ajwain
  • 1/8 tsp turmeric
  • Salt as required
  • 3 tsp finely chopped onions
  • 3 tsp finely chopped tomatoes
  • 1 finely chopped green chili
  • 1 tsp grated ginger
  • A few chopped coriander leaves
  • Cooking oil or ghee
  • 1 cup of water
Preparation Steps:
  • Add besan, ajwain, turmeric, and salt to a bowl and mix everything well.
  • Now, add ginger, onions, tomatoes, chilies and coriander leaves. Pour water and make a thick batter with a pourable consistency.
  • Heat a pan and add a few drops of oil to it.
  • Reduce the flame to medium and allow it to heat.
  • Mix the batter firmly. Take a scoop of batter and pour it in the center of the pan and then quickly spread it in the round shape.
  • Drizzle some oil around the edges and center and allow it to cook until the edges leave the pan.
  • Now flip the Cheela to the other side and allow it to cook completely. You can press the edges with the help of a spatula and wait till the Cheela gets golden spots.
  • The besan Cheela is ready to serve with hot tea and sauce.
