Bengalis are known to be foodies and that is evident with their bulging bellies (of course, I am not talking about a Bipasha Basu or Sharmila Tagore). Be it summer, monsoon, or winter – their plate is always ready with something special! Every season has some kinds of a special dish that are cooked on festive moments in those seasons and sent to people as greetings. So, winter is here and the kitchen of Bengali households are smelling of jaggery – made from date palms! The sweet fragrance of this jaggery is mesmerizing and a particular dessert item called “Nolen Gurer Payesh” is made out of this jaggery. The fresh jaggery from date palms are available in plenty during the winter season and thus wear your chef cap and enjoy this sweet & nostalgic ride.

Recipe of Nolen Gurer Payesh:
What All You Require?
  • Gobindo Bhog Rice (For Best Results) or Any Rice – 200 gms
  • Date Palm Jaggery – ½ cup
  • Clarified Butter or Ghee – 1 tsp
  • Full Cream Milk – 1 Liter
  • Bay Leaf – 1 Piece
  • Cardamom Powder – ½ Tsp
  • For Garnishing, use Chopped Nuts & Raisins
How To Proceed?
  • Soak the rice first for at least 30 minutes after cleaning it once or twice.
  • Take a thick bottom pan and pour milk and boil it on low to medium heat.
  • Stir continuously as the milk should not stick at the bottom.
  • Add bay leaf and cardamom powder for that nice fragrance.
  • Check the consistency of milk after some time.
  • Once the milk starts to thicken, add the soaked rice and keep stirring.
  • The rice would cook in this boiled milk and once the rice is cooked or becomes soft, add jaggery.
  • Let this mixture boil for 10-12 minutes.
  • The enticing fragrance would fill your kitchen.
  • You need to check the sweetness at this stage. If you want it sweeter add more jaggery.
  • Also, check the consistency at this stage. If you like the payesh to be thicker in consistency, then let this mixture boil for some more time.
  • Once you get the desired consistency of the Nolen Gurer Payesh, add the chopped nuts and raisins.
  • Some like this Nolen Gurer Payesh warm while some like it cold. So, serve in nice designer bowls as per that choice.

How & When Nolen Gurer Payesh Is Eaten?

Traditionally, Nolen Gurer Payesh is served after a “Bengali Bhuribhoj” – a scrumptious platter of at least 10-12 items. During the winter season, all the biyebari or wedding occasions are incomplete without this unique dish. Nolen Gurer Payesh is generally cooked on Makar Sankranti with the new rice that is produced in this season. Then it becomes a weekly treat and every Sunday it is served either after that overloaded Bengali lunch platter mentioned before or at breakfast or dinner. At breakfast or dinner this Nolen Gurer Payesh is served with a triangle or round-shaped Parathas or those white, innocent, & hot luchis (the Bengali version of Bhatura but crispier in taste & smaller in size).

Keep reading to get a new obsession added to your list. What makes this blog different is I’m going to help you make it in a pressure cooker. Yes, you read it right! Let’s ditch our new age-baking-made-easy-friend, The Oven! This recipe has some cool things, you’ll get to know further.

Too much of words, right? Let’s get baking…

Below are the ingredients you’d need.

  • 3 Big Packets of Chocolate Oreo Biscuit.
  • 1 ½ Cups of lukewarm milk.
  • 2 TBSP of grounded/powdered sugar.
  • 1 TBSP of Baking soda.
  • 2 TSP of Cocoa Powder.
  • 1 TSP of Vanilla Essence.
  • 2 Small cups of Sea salt or sand.
  • 2 TSP of Refined oil or butter.
  • An Aluminum cake molding pan.
  • Heavy & thick bottomed 5 to 6-liter Aluminum cooker.

With this recipe, you can serve 3-4 people and it takes 30-40 minutes to cook depending upon the amount of heat. And if you wish to bake this same cake in an oven because you cannot wait this long, simply preheat your oven at 180 degrees and place the baking pan inside and set it for 10-15 minutes. But keep checking in between. It clearly depends on the moisture of the cake.

Here’s the recipe:

Since we are not using flour, crush all the Oreo biscuits that you have in a grinder. I personally crush it with a rolling pin and beat them all up inside the packet itself. (I know, LOL!) Now that you have the flour alternative. In this, add cocoa powder, baking powder/soda, sugar, vanilla essence and blend it well in the blender. Next, pour the milk in the mixture and again blend it in the blender.

Once everything’s blended well, pour this thick batter into the baking pan that you’re going to use. Before you pour the batter, grease it with the oil or butter. Lay down a butter paper if you’d like it. I personally don’t use that. Oh btw, did you notice the binding agent that’s going to hold the mixture? There isn’t any. We used milk for the moisture and since it’s not flour you won’t be needing any binding agent.

Now for setting up the cooker:
  1. Use sea salt or sand as a layer between the pressure cooker and the pan.
  2. Remove the gasket (rubber ring) and went weight (whistle) from the lid.
  3. Recommended cooking on low flame.
  4. Use an aluminum cake pan because steel pans can make your cake burn. The aluminum cake pan that you use should be able to take dry heat. And must fit inside the cooker.

Prepare for the magic:

  1. Remove the gasket and went weight.
  2. Add cups of sea salt and spread it evenly.
  3. Now place the cooker on low flame on the stove top. Keep the flame low or sim.
  4. Keep a heatproof rack in the cooker.
  5. Place the cake pan on the rack.
  6. Secure the lid tightly & firmly!
  7. Cook the cake on a low flame. Keep checking in the middle with the help of a toothpick.
  8. Bake it till the toothpick comes out dry. It can depend on the heat honestly. There is no fixed time for it to get baked fully.

Now when you have the cake ready, you can wait for it to cool down. Or enjoy it while it’s hot. You can add chocolate sauce on top of it you wish to. Enjoy the delight!

Ingredients (What you’ll need to make them)-
  • Butter – 1 Full Cup
  • Eggs- 2
  • White Sugar- 1 & ½ Cups
  • Vanilla Extract- 2 Teaspoons
  • All Purpose Flour- 2 Cups
  • Salt- ¼ Teaspoon
  • Cocoa Powder- 2/3 Cup
  • Baking Soda- ¾ Teaspoon
  • Chocolate Chips- 2 Cups

Keeping it super simple and easy to understand to make these. Follow these steps-

  • Before you start the baking, preheat the oven to have the required temperature for the dough to be baked. Preheat at 175-200 degrees C
  • Once you’ve set the oven to preheat. On the other side, take a large bowl for the batter. For that add the butter (make sure it’s softened), white sugar, eggs, vanilla extract and mix it well till it’s blended and fluffy in texture.
  • Take another bowl and add flour, cocoa powder, baking soda, and salt. Mix it well too.
  • Now that you have two different bowls of one batter and other powdered mixture. Combine both well by pouring the batter into the bowl with flour and all. Mix it well until blended. Make sure there are no lumps.
  • Next, you take an oven tray and spread a greased cookie sheet. Drop the mixture with the help of teaspoon size spoons.
  • Once you’re done with the dropping process. Leave spaces between as when they bake, obviously they increase in their size.
  • Put the oven tray inside the pre-heated oven and bake this for 8-10 minutes.
  • Take them out and carefully put them on the wire racks to cool all of them down.

Ingredients Required:
  • 20 ml lemon juice
  • 60 ml bourbon
  • 20 ml simple syrup
  • 20 ml red wine
Preparation Steps:
  • Add bourbon, lemon juice, and simple syrup in a shaker and fill it with ice.
  • Shake well and strain into a rock glass filled with ice.
  • Now carefully pour the wine over the back of a spoon so that it floats on the top of the drink.
Aged Rum Daiquiri

A subtle blend of rum’s sweetness with sugar and lime juice. All the three ingredients need to be in a perfect amount as overdo of any one of them can ruin the flavor of the cocktail.

Preparation Steps:
  • Add all the ingredients into a shaker. Pour some ice and shake well until it is chilled.

  • 30 ml honey sage syrup

  • 15 ltr soda
  • Soaked green sage leaves
For honey sage syrup:
  • ½ cup honey
  • ½ cup water
  • 5-6 fresh sage leaves
Preparation Steps:
  • Fill the glass with ice cubes and a few sage leaves.
  • Now add gin, lime juice, and honey sage syrup and stir it well.
  • Add club soda to the mixture and stir it again.
  • In the end, garnish with sage leaves and serve it in a long glass.

We may have lots of Nepalese friends as it is India’s neighbouring country. India and Nepal are so close that we share many traditions. We claim to know a lot about Nepal, but do we really know the place? Do you know about Nepalese cuisine? No, it isn’t just the juicy & yummy momos and No! It is not Indian food. Nepal has a great variety of food just like its rich culture. Yes, the country shares its border with India, Tibet & China and definitely, these cultures have a great influence on Nepalese Cuisine. Despite the influence, Nepalese cuisine is unique and irresistible. So here is a list of must-try Nepalese Dishes:

1) Chatamari

Chatamari is often referred to as Nepali Pizza because of the way it looks. It is a round rice-flour crepe. It is cooked with a variety of toppings like meat, eggs & vegetables mixed with yummy spices and is garnished with fresh coriander leaves & onion. Since it is usually baked, it is really good for health and with all the toppings, trust me it is really juicy. Chatamari is usually prepared for festivals in Nepal but often served as a snack as well. It is delicious! While Chatamari isn’t easy to find easy in India, it is easy to cook this dish.

2) Sel Roti

A dish between Donuts & Bagels? We have it! It is Nepal’s very own Sel Roti made by deep frying Rice Flour and is truly scrumptious. It is crispy and sweet on the outside and soft on the inside. The rice flour dough is made from milk, water, oil, sugar, butter, cardamom, bananas and other flavours.  Sel Roti is usually made on religious festivals of Tahir & Dashain but sometimes also served during breakfasts with yogurt dippings. Good news for soup lovers! Thukpa is Nepal’s traditional dish influenced by Tibet and China. It is a thick noodle soup that may include meat, vegetables or eggs. This delicacy is usually served in winters and can be found all around Kathmandu. It is a perfect blend of meat and soup which will make you fall in love with the dish! Due to its popularity, Thukpa is available in many restaurants in India. Feeling cold? Why not try Thukpa? It will pamper your taste buds, make you healthier and a perfect way to make yourself warm this winters. You can also pretend to be Joey (F.R.I.E.N.D.S.) and say ‘Ummmm…Noodle Soup!’

4) Gundruk

Gundruk is one side dish which can add flavour to anything! It is a very popular dish made by fermenting leafy green vegetables. You can also refer to Gundruk is an assortment of pickles, but that wouldn’t be right! Gundruk is enjoyed as a condiment with the main course meal. It tastes amazing and will satisfy our taste buds when we might feel like having something ‘chatpata!’

5) Tongba

Beer lovers, I have an amazing news for you. Nepal has their own Millet Beer! You heard me right. This alcoholic beverage is a traditional and indigenous drink of the Limbu people in eastern Nepal. This beverage is religiously important to the community. The beverage is consumed in a very unique way. The fermented millet is poured into a vessel & mixed with hot water. It is left undisturbed for 5 minutes and then it is ready to be served. The beverage is sipped with a bamboo straw as a tradition. Tongba is Legen-Wait for it-Dary!

So, did you know about all these dishes from Nepal? You should definitely try these amazing dishes with your friends. Do not forget to have it with Tongba! There are many Nepalese restaurants in the city. So, go ahead and pamper your taste buds with these yummy delicacies.

Nobody would ever say that they don’t like Maggi. For those who have spent a considerable number of years away from home in PG’s, hostels, or rented apartments – Maggi is like pseudo-religion to them. I am one of them and this is the first thing that I ever cooked and that too asking mom the process of it. From a naïve visitor to the kitchen to an experienced one – Maggi boosted the confidence in cooking. Many of you would agree to this because, like me, you all have also tried and tested various types of easy to make Maggi recipes.

So, here are my favorites!

Cheesy Mix Veg Maggi

This is one of the simplest and yummiest easy to make Maggi recipes. You can have at any time of the day. This Maggi recipe is one of those which everyone must have tried in their kitchen. Loaded with the goodness of vegetables, this Maggi is fulfilling and can thus be a great option for your lunch or dinner menu.

Ingredients: All the vegetables of your choice can be put in here but here are what I put in my recipe.

Onion – one medium sized onion chopped in longitudinal manner; Tomato – one small chopped in longitudinal manner; Frozen peas – a handful; Cabbage – about 2 spoons very thin and fine longitudinal slices; Carrot – about 2 spoons cut in small pieces; Finely chopped Garlic: 1 spoon; Cumin seeds: ½ spoon; Salt – As per taste; Oregano: As per taste; Chopped Green Chili: ½ spoon; Chicken Masala: ½ teaspoon; Oil – 2-3 tsp, 1 Maggi Packet.

How to Make:
  • Firstly, arrange all the veggies as per list and cut them as directed.
  • Put oil in a wok or pan and first put the cumin seeds & wait for it to splutter.
  • Go ahead with onion slices followed by garlic and green chilies.
  • Remember, the idea is not to deep fry them but simply to soften the veggies.
  • Now put cabbage and carrots and sprinkle some salt in this stage.
  • Let these veggies cook and cover the lid and leave for 5-7 minutes keeping the flame on medium to low.
  • Check if the veggies have softened or not and once softened put some chicken masala in it.
  • Let the veggies soak chicken masala well and then put off the gas and go for the next step.
  • Put 2 cups of water and bring it to boil and now put 1 packet of Maggi in it and don’t let it sit in the water for more than 3 minutes.
  • Sieve the Maggi now and spread on a plate to cool down a bit.
  • Once cooled, sprinkle the Maggi Masala on it and mix it well with your hands.
  • Be careful not to break the Maggi strings.
  • Now go back to the veggies. Simply put the Maggi mixed with Masala in your mix vegetable fry. In this stage put the frozen peas and adjust the salt. Once Maggi and veggies are mixed properly, grate some cheese on it and cover for 2 minutes so that the cheese melts.
  • Put sprinkle oregano and enjoy the cheesy mix veg Maggi with your cup of coffee or tea!
Onion-Capsicum-Egg Maggi

Simple, easy, and healthy, you can have this Maggi boiled or boiled and fried both. While in a hurry or when you have limited veggies, you can enjoy this Maggi. It is a great evening or dinner meal during the chilly winter season. So, bring these ingredients and wear the chef cap for one of the easy to make Maggi recipes.

Ingredients: 2 spoons of finely chopped onion, 1 spoon of finely chopped capsicum, 1 egg, Salt – As per taste, Butter – 1 Spoon, and 1 Maggi Packet.

How To Make:
  • Put the onion and capsicum in 3 cups of water and cover for 5 minutes so that they soften up. Keep the flame high.
  • Now open and check if they have softened up.
  • Now put some salt in it followed by Maggi.
  • Let the Maggi mix with the veggies and completely soften.
  • Now put the Maggi Masala in it and that mixes break the egg and give a nice stir.
  • Cover for 1-2 minutes so that the egg cooks.
  • If you don’t want your Maggi soupy, then let the water to dry up a bit more.
  • Put in a bowl and put some butter before eating. You may put some chopped coriander leaves too!
  • For the fried version, simply follow the same way as mentioned in the previous recipe.
Soybean Maggi

Soybean is healthy and tasty both and I love my Maggi with it. As a morning breakfast, you can enjoy this lovely Maggi with your roommates. If you woke up late on a weekend and feeling lethargic to cook for yourself, then this “easy to make” Maggi recipe is perfect for you. Enjoy it while binging on Netflix.

Soybean Maggi:

Ingredients: Soybean – As much as you want it or 10 pieces if you are going for the bigger ones and half cup if you are opting for the granules. Salt – As per taste. Coriander leaves – 1 spoon finely chopped. 1 Packet of Maggi. Butter or Oil – 1 tsp. Cheese – optional.

How To Make:
  • Take 3-4 cups of water and bring it to boil. Put the soybeans in them and let them soak it for good 10 minutes.
  • Now rinse the soybeans properly in cold water and squeeze them well.
  • Keep it aside in a bowl and sprinkle some salt on them.
  • Take a pan or wok and put some oil/butter and put the soybeans in it.
  • Cook for 2-3 minutes in medium flame.
  • Now take 2 cups of water and boil Maggi and once softened put the Maggi Masala in it.
  • Put the stir-fried soybeans in your Maggi and sprinkle some coriander and grate the cheese if you want.
  • Enjoy your Maggi!
