Crossing the sweltering summer season, when the monsoon arrives, it relieves us with a cool breeze, nostalgic smell of mud-soaked in the rain, imaginative cloudy sky, and a soothing atmosphere. Nature outside wears the skin of unpredictability and looks like an artist’s paint book. Like all seasons, this season also has its favourite food types. But, if you look closely, you will see that the food cravings for monsoon season have similarities with the winter season. That’s probably because of the temperature drop and milder weather. Whatever the reason it is, there is a beautiful satisfying feeling of enjoying a platter of hot and spicy food with the sight of rain outside.

Here is a list of those food items which India loves to savor during the monsoon season.

A hot cup of ginger tea is common in all seasons but during the monsoon days (and also winter), the craze for it rises. Ginger has medicinal values and all the diseases that arise during rainy seasons like stomachache, fever, or cold are treated by it. That’s why the demand for a cup of ginger tea is more when it is raining outside. The weather remains unpredictable in this season – the temperature drops down (relieving the scorching sun rays) but at the same time the humidity stays intact. Many daily commuters get drenched in rain while going or coming back from work or school. This ginger tea surely helps.

For the tea lovers – they get another excuse to have more tea along with snacks and enjoy the view of the beautiful nature outside.

Onion, potatoes, or chilies are dipped in a batter of gram flour mixed with spices and then deep-fried in refined oil or mustard oil. Along with a cup of tea, these fritters are a must all over India to enjoy a party or simply as an evening snack shared with family members. If you take a look at any regular Maharashtrian home, you will find the wild greens like Shewla and Phodshi turned into fritters. The leaves of colocasia are also fried with besan in many parts of the country and savoured well.

Some prefer to have them with mint chutney, schezwan sauce, tomato sauce, mustard sauce, or plain curd. Then there are some people like me, who relishes these fritters with daal-chawal (lentils & rice). But I guess nothing can match up to the spirit and essence of Moong Daal ke pakode with mint chutney.

Monsoon is incomplete without a plate of Khichdi. I have seen the craze of tea and fritters all over North India during the rainy days but back in my West Bengal, I have seen rather grown up in the atmosphere of Khichdi-some monsoon. Moong and Masoor daal (types of lentils) are mixed with rice grains along with all the seasonal vegetables (beans, capsicum, carrots, peas, cauliflower, potatoes, pumpkin, etc.). It is served with a generous amount of Ghee or clarified butter. Also, comes along is a whole platter of fried things – onion fritters, brinjal fry, pumpkin flower fry, potato fry, coconut fry (with a pinch of salt, turmeric, and sugar), spicy cabbage, fried fish especially Hilsa, etc. I terribly miss being at home during monsoon only for the huge love for food.

The Bengalis cannot leave their love for fish. The biggest reason why Bengalis love monsoon in spite of all the atrocities in towns and cities of Bengal is that this is the season of the “king of fishes” Hilsa. The Ganges of West Bengal or the Padma of East Bengal (Bangladesh) – both bless this community with an amazingly tasty fish. The price in this season sometimes reaches up to 22000 also. This fish is simply fried or made into various gravy items with mustard, coconut milk, or curd. With a plate of rice, this fish takes the Hilsa lovers to heaven – literally!

My grandfather taught me to enjoy Hilsa with Khichdi – and this combination is also worth a try.

Available everywhere in India during the monsoon months, this is a popular evening snack. The corns are taken out of its cover and roasted in high heat generously. Then a dash of black salt and lemon is applied to it. Some prefer to have boiled corns while some prefer the crispy corns which are stir-fried with onions, tomatoes, and capsicum. In any form – corns taste amazing.

Your mom and grandma must be telling you not to have chaat outside. But do you know how blissful is it to enjoy the chaats when it is raining outside? The Aloo Tikki chaat with mint chutney, curd, and chaat masala is very dear to all. In some shops, this aloo Tikki chaat is available with black grams also. The stomach may ache later but don’t worry there is medicine for that.

The fame of this triangle-shaped snack is huge. As a breakfast item or as an evening snack– the crunchy and tasty samosas are dipped in mint chutney, imli chutney, tomato sauce, etc. and savoured. It comes in a variety of fillings – potatoes, peas, paneer (cottage cheese), cauliflower, noodles, soybeans, corns, etc. The joy of having Samosa doubles in the monsoon and of course that is supported by a cup of tea.

This one is a famous dish among the Mangalorean Catholics. It is a coconut-based curry made with green amaranth stalks, Colocasia stems, and hog plums. It is a seasonal specialty and is cooked for the feast of the birth of the Virgin Mary.

Do you know there is something called Malabar Coffee? During the monsoon season, this Malabar Coast sees harvested coffee beans. They are exposed to moisture-laden monsoon air for at least 6 weeks. The coffee beans then swell up, lose some of their acidity, and obtain that signature mellow notes. With some fritters or simple biscuits – this cup of coffee is a prized possession I must say.

Eggs contain 155 calories, 16% of fat, 13 gms of protein, and a good amount of Vitamin A and D. Some like it in breakfast plate while some love it with rice. In various corners of India, it is consumed in different styles. My mom and granny used to cook the spicy and zesty egg curry where potatoes used to be a prime ingredient. Over the years while staying alone, I have found a comfort zone in my kitchen. So, over the weekend, holiday time, or when the mood is just right, I enter the kitchen to create something new and unique. It is really thrilling to experiment with the known spices.

The age-old recipes made with poppy seeds and cashew nuts always turns out tasty and this egg curry is made with these two prime ingredients. In order to cook something new and royal to impress yourself or any of your loved ones – do try this recipe once.

What All You Need?
  • Eggs: 6
  • Onion: 3 large
  • Garlic: 20 cloves
  • Bay Leaf: 1
  • Black Cardamom: 1
  • Green Cardamom: 1
  • Cinnamon: 1 Stick
  • Cumin Seeds: 2 tsp
  • Fennel Seeds: ½ tsp
  • Salt: As per taste:
  • Sugar: Just a pinch or two
  • Curd: ½ cup
  • Milk: 1 cup
  • Hot Water: 1 cup
  • Cashew Nuts: 10-12 pieces
  • Grated Coconut: 3 tsp
  • Poppy Seeds: 3 tsp
  • Green Chilies: 4-5
  • Black Pepper: 4 tsp
  • Cumin Powder: ½ tsp
  • Coriander Powder: ½ tsp
  • Garam Masala Powder: ½ tsp
  • Turmeric: Just a pinch or two to color the eggs
  • Butter: 50 gms
  • Finely Chopped Coriander Leaves: 2 tsp
  • Kasuri Methi: 1 tsp
How To Make?
  • Take 2 onions and make a paste and keep it aside.
  • Soak the cashew nuts and poppy seeds in hot water for 30-40 minutes first in separate bowls.
  • Now take the cashew nuts, add grated coconut, and poppy seeds and make a fine paste.
  • Slit the green chilies vertically, slice the garlic longitudinally, and finely chop 1 remaining onion.
  • Take half cup curd and whisk it until smooth. You may add 2-3 spoons of water if needed.
  • Now boil the eggs. Remember that you need hard-boiled eggs for this recipe. So, you will need to boil for 10-15 minutes.
  • After that keep the eggs into a bowl of ice-cold water for 5-7 minutes.
  • Now peel the eggshells and pat them dry.
  • Take 1/4th spoon of salt, ½ tsp of turmeric, and ½ tsp of black pepper powder and smear the eggs in them. Remember to prick the eggs before smearing the spice mix on them. Keep the eggs covered in spice mix for 10-15 minutes.
  • Take a spoon of butter and 1 tsp of refined oil and add the eggs and fry them very well. The outer skin of the eggs should become golden brown. Keep these eggs aside.
  • Now take 3/4th of the mentioned amount of butter and mix 3-4 tsp of refined oil and add the whole spices (cumin seeds, black & green cardamom, bay leaf, cinnamon, and fennel seeds). Let them crackle for a few seconds and then add the finely chopped onions.
  • Let the onions turn golden brown. To make them soften fast you may add a pinch of baking soda and sprinkle some salt.
  • Then add onion paste and stir for a minute. Then cover the pan for 2-3 minutes. Check if the onion paste has changed color.
  • Once the onions have changed color and became soft, you can add the powdered spices one after the other and stir for some time. Cover the pan for 2 minutes.
  • Remove the cover and add the poppy seeds + coconut + cashew nuts mixture and give a nice stir so that no lumps form at all.
  • Keep the flame on medium and cook this mixture for 3-4 minutes.
  • Now, add the curd mix and stir for another 2 minutes. Cover the lid and let all the spices mix together for at least 4 minutes.
  • Now add the cup of milk in this pool of aromatic curry and let it boil for 5 minutes.
  • Check the salt and sprinkle the remaining black pepper powder.
  • If you want more gravy then add hot water.
  • Finally, add the sugar and give a stir.
  • Now add the egg pieces and give a nice stir again.
  • Add the remaining butter and decorate with slit green chilies, sprinkle kasuri methi, and garnish with chopped coriander leaves.
  • Enjoy this heavenly delicacy with paratha, roti, or rice.

This supremely delicious egg curry was a result of experiments in the kitchen and I have got lovely reviews about it from everyone I have served. It is a wonderful weekend recipe, especially for monsoon and winter weather.

The popularity of chai or tea across India is huge. But every state comes up with their specialty in making and serving tea. For example, the famous cutting chai in Mumbai is served in small glasses consist of cardamom, ginger, lemongrass, and fennel. All across North India, you will get to see the prominence of Masala Chai in paper cups and when you visit Ladakh, you will experience Butter Tea. So, basically, the love for tea is the same all over the country – just the presentation is different.

One such tea-loving state is West Bengal where a cup of tea never ends with just a cup of tea – it elaborates into many food/snack items. Chai across the streets of Bengal are served in cute, rustic, and nostalgic “bhaad” or kulhaad. Although a sweet loving state, Bengalis prefer strong tea with less sugar. The common phrase which any Bengali would say while meeting an old friend or relative suddenly is that – “cholo kothao giye ektu chaa-taa khoa jaak”. It means let’s go somewhere and have some tea. But you see there is a “taa” said along with chaa and that refers to countless snack types which are prepared at home for guests, served at street stalls, and also available in restaurants.

In most part of India, the tea time snacks are generally light but you can say that “Chaa-Taa” or tea time snacks in Bengal are almost a meal. Read below about the delicious, crunchy, and fulfilling Bengali snacks that accompanies tea.

Being a Bengali, I cannot imagine my world without chops. Our CM once said that no business is small even if it is running a tea and chop joint at the roadside. It’s sad that she then became the theme for various memes but nothing affected the fame of chops. Available in a variety of stuffing ranging from soyabean to mango, chicken or mutton to banana flowers – the simple potato chop is still the ones that are mostly in demand. Mostly, it is an evening snack served with Muri or puffed rice. I still remember during my childhood going to a chop shop with my Dadu and spent only 1 rupee for Alur chop or potato chop. Well, the price has gone up to 5 or more but the satisfaction is still the same.

Bengalis greet their guests or feast among themselves with a bowl of muri & chop.

Moshla Muri or Jhal Muri:

Moshla means spices, Jhal means spicy feeling, and muri mean puffed rice.

As a child, I was fascinated by the Jahlmuri or Moshla Muri wala in local trains. Going out of office somewhere in trains meant a thonga or paper cup of jhalmuri and that cost only Rs. 2. Made from puffed rice, mango pickle oil, onion, ginger, chanachur, jhuri bhaja, boiled potatoes, soaked chana, green chilies, and secret masala powder. They serve it with a slice of coconut on top. In my home, my chhoti dadi still prepares the best Jhal muri. Tea becomes dearer with such crunchy delicacies.

This triangular shaped delicacy is known as Samosa in North India. Singara is different from Samosa because the spices are different. The Bengali Singara is devoid of coriander seeds and is smaller in size. The stuffing of potatoes are generally not mashed like in Samosas and also the flour cover of singaras are thinner. Bengali Singaras are also not so spicy. These facts make the Bengali singaras lighter than the Northern counterparts. With a cup of tea, any average person can have 2 singaras. It is also accompanied by muri sometimes.

Flattened or beaten rice is called poha in Hindi and Chirey in Bengali. Bhaja means fried. Raw peanuts, pepper powder, salt, and grated coconut are taken fried with a minimal amount of ghee or clarified butter. It becomes a crispy dish to be enjoyed with a cup of tea. It is consumed mostly during the monsoon evenings.

I don’t know the Mughal invented this dish or not but the reality is it is too yummy. The Bengalis prefer to have it from the restaurants. It is served with a spicy Bengali dum alu. The normal flour is used and a big paratha is rolled. Right at the center, the egg mix with onion, red chili powder, salt, and green chilies is poured. It is then folded from four sides and deep-fried in hot oil.

Another immensely famous tea time snack is pakora or fritters made from chicken. Chicken is marinated in salt, pepper, and other spices and then boiled for some time so that it becomes ultra-soft. Then a batter is prepared with gram flour, salt, water, red chili powder, and eggs. The chicken pieces are dipped in them and then deep-fried. It is served with cucumber and onion slices with mustard sauce and tomato ketchup.

The rest of India calls it mixture which is mostly spicy. But the chanachur of Bengal is available in various tastes of tok-jhaal-mishti meaning sour, spicy, and sweet. When guests appear suddenly without any information, biscuits, and chanachur save grace with hot tea. It is also mixed in moshla muri.

Just the way you make mathri – Nimki also follows the same process. But these are smaller rhombus in shape and have only Kalonji or Nigella seeds as flavor. It is a tasty and healthy snack to be enjoyed with tea in the morning or evening.

Oh, how can you think the Bengalis can leave fish from their tea time snacks?

It is available in square, rectangular or even spherical shape and is consumed with mustard sauce and some salad. It is one of the most famous evening time snacks. All the major coffee houses of Bengal have this delicacy. Fish fillets, potato, ginger, and garlic paste. Green chili, cumin powder, coriander powder, onion, salt, and pepper are mashed really well. For that, the fish fillets are boiled in salt and turmeric water for some time and then fried with spices. This mixture is then given shape with palms and then dipped in egg white and then coated with breadcrumbs and finally fried.

Another famous item is Fish Kobiraji which is generally enjoyed in coffee shops only as it requires quite a patience and skill to prepare at home. When it is served on the plate you may feel that the fish is caught up in the web of the egg. The process of preparing the fish is the same as the fish cutlets but here the fish stuffing is fried with egg in a complicated manner.

Kathi Rolls were invented in Kolkata and became a famous item during the British rule only. The skewer roasted kebabs were rolled in parathas and served. Skewers are known as Kathi in Bengali and that’s how the name originated. Over time, many places have tried many types of Kathi Roll recipes. But most of the places make it like a paratha roll with veggies or pieces of chicken or mutton without making kebabs of them. The beauty of having them with tea in the company of friends is a special feeling.

The Bengalis are often known as “khaddo-rosik” or hardcore foodies and these tea-time snacks really proves that.

In particular, these green leafy veggies are rich in Vitamin K that helps in protecting your arteries. They also promote proper blood clotting. Whole Grains:

In India, garlic is very common in various food types. For centuries, garlic has been used as a natural remedy to treat a variety of ailments and now recently it has also been proved to have medical properties that help in keeping the heart safe. A compound named Allicin is found in garlic that is believed to have a multitude of therapeutic effects. Garlic improves BP and cholesterol and helps inhibit blood clot formation. But simply frying the pieces and using in food is not going to help you. Have it raw one or two cloves daily. You can also crush it and let it sit for a few minutes before using it for cooking. This process allows the formation of Allicin.

Green Tea:

Green tea is like the revelation of the century – isn’t it? From aiding in weight loss to solving indigestion, from giving a glowing skin to now lowering risks of heart diseases – is there anything else that green tea cannot do?

Green tea is a rich source of polyphenols and catechins. Thus it helps in lowering cholesterol, triglycerides, and blood pressure. They also help in reducing cell damage, inflammation, and protecting the overall heart health. So, replace your normal milk-sugar tea with green tea. Green tea is available in a variety of flavors like ginger, tulsi, lemon, chamomile, etc. Choose the one you like and stay hale and hearty. But once in two days you can enjoy your kind of milk and sugar tea but don’t forget to increase your intake of green tea on those cheat days.

Dark Chocolate:

Many people don’t like the taste of dark chocolates – because it is devoid of sweetness. It has more cocoa content that leads to a bitter taste. This high cocoa content makes it rich in antioxidants like flavonoids that boosts a healthy heart. Consumption of a bite of dark chocolate daily leads to lower risks of heart diseases. A study on a group of people who consumed dark chocolates 5 times a week had 57% less risk of heart diseases. So, pick up the dark chocolates with more than 70 % of cocoa content and keep your heart cheerful.

Chicken is definitely a winter or monsoon time delicacy. But believe me, there is actually no season for hardcore chicken lovers (like me). The rising temperature during summer season doesn’t actually leave with an appetite to enjoy spicy food. During the summer season, it is actually suggested to consume less spicy food because light food is easy to digest and helps in staying fit. So, to give the chicken a summer special touch, here is my special lemon pepper chicken. Lemon makes the chicken tender and adds a nice smell. Pepper is any day a better option than red chili powder. It provides a healthy heart, promotes a good digestive tract, and mitigates migraine.

Believe me, chicken also loves these two items and you will know that when you will have a piece of this chicken in your mouth.

What All You Need?
  • Chicken: 500 gms
  • Garlic (peeled and finely chopped): 25-30 cloves
  • Onion Paste: 5 tsp
  • Lemon Juice: 6-7 tsp
  • Cumin Seeds: 2 tsp
  • Salt: As per taste. But during marinade use 2 tsp
  • Black Pepper (Crushed): 7 tsp (you may reduce it in case you need it less spicy)
  • Coriander Leaves (finely chopped): 2 tsp
  • Butter: 4 tsp
  • Youghurt: ½ cup
  • Milk: ½ cup
  • Hot water: As required.
How To Marinade?
  • To marinade firstly, clean the chicken pieces well and pat them dry.
  • Make some cuts on the chicken so that the pieces soak spices during marination.
  • Now in a large mixing bowl mix 2 tsp of butter, 4 tsp of black pepper powder, 2 tsp of salt, 5 tsp of onion paste, 6 tsp of lemon juice, and half the peeled and chopped garlic. Make sure each and every ingredient should mix very well.
  • Now put the chicken pieces in this aromatic mix and coat the chicken nicely.
  • Keep this large bowl covered inside your refrigerator for a minimum of 1 hour and a maximum of 4 hours.

Tip: The more your marinade this chicken recipe, the softer, juicier, and tastier your chicken would be.

How To Cook Lemon Pepper Chicken?
  • First of all, take out the chicken from the refrigerator and keep it in room temperature for a while.
  • Now, take a clean wok and put the remaining 2 tsp of butter in it.
  • Put 2 tsp of cumin seeds and let it crackle.
  • Now put the rest half of the peeled and chopped garlic and stir well.
  • Whisk the yoghurt and milk well in the meantime.
  • Once the garlic turns golden brown, put the pieces of chicken. Take care of the excess juices (they should not drop in your wok)
  • Stir the chicken for 5 minutes. Put the lid on and let it cook itself for another 5 minutes.
  • Now take the yoghurt and milk mix and pour it.
  • Meanwhile, keep the hot water ready too.
  • Let the yoghurt and milk mix in the chicken very well. Put the lip on and let it boil for 5 minutes.
  • Remove the lid and pour the remaining 3 tsp of black pepper powder and coriander leaves.
  • Give a nice mix and pour some hot water as per your requirement.
  • Check the salt and cover with the lid and let the whole chicken mix for another 10 minutes.
  • Open the lid, taste it once.
  • You may now garnish with a dash of cream and another spoon or two of lemon juice.

Spread out 3 quarters of grapes in a metal baking pan & freeze it for 25 minutes to an hour. While the grapes are chilling out & having a good time, take a large pitcher and mix the remaining ingredients. Start with grape juice, lemon, wine, vodka, sliced apples, & sugar. Stir it until the sugar gets dissolved.
Divide the frozen grapes & ice into the glasses and pour the magical mixture of Sangria.

  • 45 to 50 ml of Rum
  • 20-25 ml Lemon Juice
  • 8-10 ml Simple Syrup
Serves: 1 Glass

Gather all the ingredients and pour them in the cocktail shaker. Shake it vigorously so all the ingredients would blend well. You could add ice in the cocktail shaker, but make sure you don’t use more than 2 to 3 cubes.

  • 1 container of warm fudge ice cream topping
  • 4 ltr vanilla ice cream

Preparation Steps:
  • Crush Oreos in a blender and mix with melted butter.
  • Press cookie crust in a cake pan.
  • Keep ice-cream in room temperature for about 30-25 minutes. Once it softens, then spread ice-cream on the Oreo crust and freeze for 2 hours.
  • Then pour warm fudge topping over ice-cream and freeze for about 6-8 hours until well chilled.
  • Now cut it into serving-size pieces with a knife. Top every serving with whipped topping, drizzled hot fudge, nuts, and crushes Oreos and your Mississippi mud pie is ready to serve.
Strawberry & Snickers Sticks: Easy to make dessert by stringing cut-up candies and sliced strawberries on bamboo skewers.

For the crust-

  • 1 ½ cups of crushed graham crackers
  • 6 tsp unsalted melted butter
  • 1 tsp sugar

For the filling-

  • 1 cup mascarpone cheese
  • 3 ½ cups of chilled heavy cream
  • 3 tsp sugar
  • 1 tsp vanilla extract
  • Mixed berries
Preparation Steps:
  • Add graham cracker, butter, and sugar in a mixing bowl and mix it well. The texture should be similar to wet sand.
  • Divide the crust between 4 tarts, press it down firmly, and refrigerate for 1-2 hours. You can also bake the crust by placing in a 375-degree oven for 5-6 minutes or until it turns golden brown.
  • To prepare the filling, add heavy cream into a stand mixer fitted with a whisk arrangement and whip until the cream turns soft. Now, take it out of the bowl and keep aside.
  • In the same bowl, add mascarpone cheese, vanilla extract, and sugar to the stand mixer fitted with a whisk arrangement. Whisk until it turns smooth.
  • Place the whipped cream into the mascarpone cheese mixture. Now put it back on the stand mixer and whisk until well combined.
  • Put filling into the tarts and place them in the refrigerator for 1-2 hours. Before serving, top them with fresh berries.

  • 5 to 3 kgs watermelon
  • Simple light syrup
  • ½ cup of lime juice
  • Zest of 2 limes
  • ¼ cup of water
  • ¼ tablespoon salt
Preparation Steps:
  • Remove the skin and seeds of the watermelon and cut it into 2-inch pieces.
  • Make the simple syrup by combining 2 tsp sugar, ¼ cup water, and ¼ teaspoon salt in a saucepan and put it on a stove. Bring it to boil and then reduce the heat until the sugar dissolves completely.
  • Now remove the saucepan from the heat. Add the zest of lime and lemon juice and stir it well. Let it cool completely and then strain it into a bowl.
  • Now blend half of the simple syrup mixture and half of the melon in a blender until it turns smooth.
  • Strain it into a square pan and repeat the process with the remaining syrup and watermelon. Then transfer it to the same square pan. Cove it and freeze for about 8 hours.
  • Take it out of the fridge. Transfer to glasses, add a splash of soda water and serve with fruits.

  • In a pitcher or a big glass jug, fill it with all the fruits.
  • Pour the Red Wine (Quantity as preferred) in that pitcher and stir it well.
  • Your Sangria’s ready! (That Easy!) Refrigerate before serving for about 3-4 hours. Overnight preferably.
  • Stir it well again before pouring into the glasses.
  • You can also add sparkling water to give some bubbles!
