Chicken is definitely a winter or monsoon time delicacy. But believe me, there is actually no season for hardcore chicken lovers (like me). The rising temperature during summer season doesn’t actually leave with an appetite to enjoy spicy food. During the summer season, it is actually suggested to consume less spicy food because light food is easy to digest and helps in staying fit. So, to give the chicken a summer special touch, here is my special lemon pepper chicken. Lemon makes the chicken tender and adds a nice smell. Pepper is any day a better option than red chili powder. It provides a healthy heart, promotes a good digestive tract, and mitigates migraine.

Believe me, chicken also loves these two items and you will know that when you will have a piece of this chicken in your mouth.

What All You Need?
  • Chicken: 500 gms
  • Garlic (peeled and finely chopped): 25-30 cloves
  • Onion Paste: 5 tsp
  • Lemon Juice: 6-7 tsp
  • Cumin Seeds: 2 tsp
  • Salt: As per taste. But during marinade use 2 tsp
  • Black Pepper (Crushed): 7 tsp (you may reduce it in case you need it less spicy)
  • Coriander Leaves (finely chopped): 2 tsp
  • Butter: 4 tsp
  • Youghurt: ½ cup
  • Milk: ½ cup
  • Hot water: As required.
How To Marinade?
  • To marinade firstly, clean the chicken pieces well and pat them dry.
  • Make some cuts on the chicken so that the pieces soak spices during marination.
  • Now in a large mixing bowl mix 2 tsp of butter, 4 tsp of black pepper powder, 2 tsp of salt, 5 tsp of onion paste, 6 tsp of lemon juice, and half the peeled and chopped garlic. Make sure each and every ingredient should mix very well.
  • Now put the chicken pieces in this aromatic mix and coat the chicken nicely.
  • Keep this large bowl covered inside your refrigerator for a minimum of 1 hour and a maximum of 4 hours.

Tip: The more your marinade this chicken recipe, the softer, juicier, and tastier your chicken would be.

How To Cook Lemon Pepper Chicken?
  • First of all, take out the chicken from the refrigerator and keep it in room temperature for a while.
  • Now, take a clean wok and put the remaining 2 tsp of butter in it.
  • Put 2 tsp of cumin seeds and let it crackle.
  • Now put the rest half of the peeled and chopped garlic and stir well.
  • Whisk the yoghurt and milk well in the meantime.
  • Once the garlic turns golden brown, put the pieces of chicken. Take care of the excess juices (they should not drop in your wok)
  • Stir the chicken for 5 minutes. Put the lid on and let it cook itself for another 5 minutes.
  • Now take the yoghurt and milk mix and pour it.
  • Meanwhile, keep the hot water ready too.
  • Let the yoghurt and milk mix in the chicken very well. Put the lip on and let it boil for 5 minutes.
  • Remove the lid and pour the remaining 3 tsp of black pepper powder and coriander leaves.
  • Give a nice mix and pour some hot water as per your requirement.
  • Check the salt and cover with the lid and let the whole chicken mix for another 10 minutes.
  • Open the lid, taste it once.
  • You may now garnish with a dash of cream and another spoon or two of lemon juice.

Ingredients:
  • ½ cup melted butter
  • 1 packet of Oreo
  • 1 container of warm fudge ice cream topping
  • 4 ltr vanilla ice cream
  • Whipped topping
  • 2 cups of chopped nuts
  • Crushed Oreos
Preparation Steps:
  • Crush Oreos in a blender and mix with melted butter.
  • Press cookie crust in a cake pan.
  • Keep ice-cream in room temperature for about 30-25 minutes. Once it softens, then spread ice-cream on the Oreo crust and freeze for 2 hours.
  • Then pour warm fudge topping over ice-cream and freeze for about 6-8 hours until well chilled.
  • Now cut it into serving-size pieces with a knife. Top every serving with whipped topping, drizzled hot fudge, nuts, and crushes Oreos and your Mississippi mud pie is ready to serve.

  • 8 large strawberries cut into half
  • 6 Snickers bars cut into half
  • Caramel sauce
  • Coarse sea salt
  • 4 bamboo skewers
Preparation Steps:
  • Place parchment paper on a baking sheet.
  • Thread the strawberries and Snickers pieces alternately on bamboo skewers.
  • Now transfer them to the baking sheet and freeze for at least 4 hours.
  • When ready to serve, transfer the frozen fruit and chocolate sticks to a serving plate, drizzle with the caramel sauce, and sprinkle with coarse sea salt.

No Bake Mascarpone Cheese Fruit Tarts

Ingredients:

For the crust-

  • 1 ½ cups of crushed graham crackers
  • 6 tsp unsalted melted butter
  • 1 tsp sugar

For the filling-

  • 1 cup mascarpone cheese
  • 3 ½ cups of chilled heavy cream
  • 3 tsp sugar
  • 1 tsp vanilla extract
  • Mixed berries
Preparation Steps:
  • Add graham cracker, butter, and sugar in a mixing bowl and mix it well. The texture should be similar to wet sand.
  • Divide the crust between 4 tarts, press it down firmly, and refrigerate for 1-2 hours. You can also bake the crust by placing in a 375-degree oven for 5-6 minutes or until it turns golden brown.
  • To prepare the filling, add heavy cream into a stand mixer fitted with a whisk arrangement and whip until the cream turns soft. Now, take it out of the bowl and keep aside.
  • In the same bowl, add mascarpone cheese, vanilla extract, and sugar to the stand mixer fitted with a whisk arrangement. Whisk until it turns smooth.
  • Place the whipped cream into the mascarpone cheese mixture. Now put it back on the stand mixer and whisk until well combined.
  • Put filling into the tarts and place them in the refrigerator for 1-2 hours. Before serving, top them with fresh berries.

Ingredients:
  • 5 to 3 kgs watermelon
  • Simple light syrup
  • ½ cup of lime juice
  • Zest of 2 limes
  • ¼ cup of water
  • ¼ tablespoon salt
Preparation Steps:
  • Remove the skin and seeds of the watermelon and cut it into 2-inch pieces.
  • Make the simple syrup by combining 2 tsp sugar, ¼ cup water, and ¼ teaspoon salt in a saucepan and put it on a stove. Bring it to boil and then reduce the heat until the sugar dissolves completely.
  • Now remove the saucepan from the heat. Add the zest of lime and lemon juice and stir it well. Let it cool completely and then strain it into a bowl.
  • Now blend half of the simple syrup mixture and half of the melon in a blender until it turns smooth.
  • Strain it into a square pan and repeat the process with the remaining syrup and watermelon. Then transfer it to the same square pan. Cove it and freeze for about 8 hours.
  • Take it out of the fridge. Transfer to glasses, add a splash of soda water and serve with fruits.

  • Butter – 1 Full Cup
  • Eggs- 2
  • White Sugar- 1 & ½ Cups
  • Vanilla Extract- 2 Teaspoons

Directions-

Keeping it super simple and easy to understand to make these. Follow these steps-

  • Before you start the baking, preheat the oven to have the required temperature for the dough to be baked. Preheat at 175-200 degrees C
  • Once you’ve set the oven to preheat. On the other side, take a large bowl for the batter. For that add the butter (make sure it’s softened), white sugar, eggs, vanilla extract and mix it well till it’s blended and fluffy in texture.
  • Take another bowl and add flour, cocoa powder, baking soda, and salt. Mix it well too.
  • Now that you have two different bowls of one batter and other powdered mixture. Combine both well by pouring the batter into the bowl with flour and all. Mix it well until blended. Make sure there are no lumps.
  • Next, you take an oven tray and spread a greased cookie sheet. Drop the mixture with the help of teaspoon size spoons.
  • Once you’re done with the dropping process. Leave spaces between as when they bake, obviously they increase in their size.
  • Put the oven tray inside the pre-heated oven and bake this for 8-10 minutes.
  • Take them out and carefully put them on the wire racks to cool all of them down.

Ingredients:

1 cup Instant Oats, 1/2 cup Moong Dal or Split Yellow Lentils, 2 tbsp Vegetable Oil, 2-3 Cloves, 2 inch Cinnamon, 1 tsp Cumin Seeds, 1/4 tsp Hing or asafetida, 1/2 cup Onion Chopped, 1 tsp grated Ginger, 1/2 tsp Turmeric powder, 1/4 cup Carrot Cut into small pieces, 1/4 cup Beans Cut into small pieces, 2 tsp Peas, 2 tbsp Corn, salt and pepper to taste.

Process:

  • Firstly, heat the vegetable oil in a pressure cooker and one by one drop cumin seeds, cloves, and let the lovely aroma fill in your heart.
  • Now add asafetida or hing and let it splutter for a few seconds.
  • No add the grated ginger and onion fry until onion turns luminous or golden brown.
  • Now add oats and the lentils followed by 4 cups of water, all the chopped veggies, salt, pepper, and turmeric powder.
  • Pressure cook the Oats and Veggie Khichdi and wait for 1 whistle in high heat followed by 2 whistles in low heat.

Serve this tasty and healthy dish with a drop of butter or ghee.

All you need is 2-3 eggs and all your favorite veggies. 1 and a half spoon of all veggies like carrots, cabbage, broccoli, tomato, onion, tomatoes, coriander, and mushrooms/paneer, 2-3 garlic cloves, some salt and pepper, and oil for frying.

Process:

  • Also, take 2-3 cloves of garlic.

  • Keep the veggies aside and pour half a spoon of oil or butter and pour half of the egg on the pan.
  • Let the bubbles disappear and then spread your favorite veggies into it.
  • Finally, cover the veggies with the remaining eggs.
  • Cover the pan with a lid and let it cook for 2-3 minutes. Then flip and cook for another 2 minutes.

And the craving for a chocolate cake is something that can arise at 3 A.M, at night. So, this is the recipe to help yourself.

Ingredients:

All you need for this cake in a mug recipe are – 3 tsp of all-purpose flour, choco chips, milk, vegetable oil, 2 tsp of cocoa powder, 1/4th tsp of baking powder, and 1 and a half tsp of sugar. Vanilla extract is optional for you which you must use in case of inclusion of egg in the recipe.

Process:

  • Take a 12-ounce microwave-safe ceramic mug put the dry ingredients first which are flour, sugar, baking powder, and cocoa powder.
  • Then pour the liquid ingredients like milk, vegetable oil, and vanilla (optional).
  • Now stir in the choco chips.
  • Put the mug in a microwave on high for 90 seconds.
  • Remember not to overcook the cake and let the cake cool before jumping into it.

Lentils should not be missed from your regular diet chart because they are not only tasty but have all the required proteins that can keep you safe and sound. Be it brown, green, yellow, red, or black — any type of lentil is low in calories & rich in iron and folate. They also have health-promoting polyphenols and may reduce several heart disease risk factors. A bowl of lentils and veggie soup would be a perfect dinner for you.

Ingredients:

½ cup lentils (masoor dal), 1 cup of carrots sliced in ½ inch pieces, ½ cup of green beans, 1 cup of celery, 3 medium-size tomatoes cut into pieces, half inch ginger in thin slices, ½ tsp turmeric and pepper, 1 and a half tsp of salt. (1/2 cup masoor daal can sustain 4 people) For seasoning: 2 tsp clarified butter (ghee) or 2 tablespoons oil, ½ tsp cumin seed, ½ tsp garam masala.

Process:

  • Firstly, wash the masoor daal and soak it in 2 cups of water for at least 1 hour. Because by soaking the lentils increase in volume.
  • Now heat 4 cups of water in a pressure cooker on medium high heat and pour the lentils followed by salt, turmeric, black pepper, ginger, carrots, green beans, celery, and tomatoes.
  • Now close the pressure cooker and as the pressure cooker starts steaming turn the heat down to medium and cook for about 6 minutes.
  • Mix daal or lentil well and in case the lentil is thick, add some warm water and check the salt content too.
  • Now for the seasoning, heat oil, ghee, or butter and add cumin seeds and garam masala in it.
  • Once it splutters, remove from heat and pour it over the lentils.
